The holiday season is upon us, and while we may see, hear and read admonitions and tips for healthy holiday eating, I’d like for us to think about healthy eating in terms of a healthy South Carolina economy. According to Dana Beach with the S.C. Coastal Conservation League, “…less than 10 percent of what we eat in South Carolina is grown in the state.
